So I removed all my trim (bumper caps, fender flares, all that.. And my quarter panels are practically gone.. There's nothing left on passenger side.. So what should I do to cut that out? Just cut it straight with the body line where the bumper cap clips on? ?

This might help you. Probably would turn out nicer with a welder but I've seen people get by with rivets and/or sheet metal screws if you don't have access to one.

Mine wasn't as bad as yours sounds but its not too bad to fix, well mostly.

I cut off the bottom leaving about an inch below that second bend down and bent the leftover metal up flat. Took some work to get it even.

Then I made a panel out of 16 gauge steel and welded it over the bottom of the quarter panel.

Some putty, seam sealer, and paint later. Viola!
