I joined the second I heard I was getting an xj and now that I've got it, I can't wait to get involved here. I've already found tons of helpful threads and wanted to thank you all for your collective knowledge and experience.

It's a 2000 Sport.
As for plans.....
DD with some weekend off-roading

Just put 235's all around and took off the front bumper.
No lift yet, 2 inches when I do. (Thinking v8 coils and s10 leafs) any suggestions?

That will work. You will get about 1.75" from the V8 coils and up to 4.5" with all the S10 leaves

Would I be better off buying a kit with full leaf, and if so what kind should I go with for a minimal budget 2" lift. I hear "get an RC kit" a lot , but I hear the RC lifts ride rough. Same reason I'm steering away from an add a leaf.

Old man emu makes some 2.5" springs i believe and they are said to have one of the best rides offered... not cheap though. For around 2" you don't necessarily need a "kit", because there's not a lot to do at that height. Some springs and perhaps shocks should just about do it. Don't forget an alignment of course.

Welcome to the site. seems like you already have a good idea of what you want to do. I can offer from personal experience that a RC lift does not ride rough. at least in a fullsize chevy

The RC shocks seem to be the culprit on the rough ride. The right shocks make all the difference

Would it be worth $100 to throw a 2" shackle/coil spacer lift in until I can coils/leaf ? Not sure what the side effects would be from changing the shackle angle, but I'm looking to get a little more clearance and articulation on the trails.

Also, are there any decent budget coils I could get instead of used v8's?

I'm at stock suspension now with 235's and no front bumper and only the inner fender trimmed.

Yes, you can do that. Every inch of shackle length changes the pinion angle by 1°. You may need to add a shim to put the pinion angle back. We have a thread on that
