I rolled my 94 two door so I chopped the top off. Everything above the bottom of the windows. I know its a unibody and it should taco but it hasn't yet. I want to build a cage and a windshield. Maybe a folding style from an old jeep or a scout or something but I don't know how I would mount it. If I get that done i would like to stretch some canvas or something over the top to keep the rain and snow out.

If you have any info that might help me out or know of a project similar to this I'd appreciate it.

Since you are doing it from scratch, you can use glass or something called speed glass. The latter is a plastic treated so it can withstand windshield wiper use. You could get simple with it and make an angle iron frame, then drill and bolt it down. Wipers can be installed later to take care of that legality.
